Adas Polo
عدس پلو
Rice & Tahdig
What is it?
Cooked lentils are layered with parboiled rice and steamed. Fried raisins, and in many households dates, are stirred through or scattered over the top.
The result is savoury with sweet points running through it, and it is usually finished with cinnamon and a little saffron.
The Persian table
Adas polo is an everyday dish, often made without meat, and reheats well — which is part of why it is a common weeknight meal.
