Rice & Tahdig
پلو، چلو و تهدیگ
Rice is the other half of most Persian meals. Chelow is plain rice parboiled, drained and steamed until the grains stand separate; polo is the same rice layered with something else before it steams.
Underneath either one sits tahdig — the crust that forms against the base of the pot.
