Chapter 1 of 19
Cardamom
The Essentials

Cardamom is the everyday Persian after-meal lifter, and chai-ye hel covers both jobs at once — the digestion and the mood.
Use the green pod (Elettaria) for Persian and Ayurvedic remedies, not the smoky black pod (Amomum).
Two to four crushed pods a day is a comfortable culinary range, and they are best crushed just before use. The aroma collapses within hours of grinding.
Cardamom is one of the world's most prized spices, native to the Western Ghats of India and beloved in Persian tea and sweets. Its cooling-warming aromatic profile makes it both a digestive and a mood lifter.
Known to botanists as Elettaria cardamomum.
