What Barley Is

Barley (Hordeum vulgare) is one of humanity's oldest cultivated grains and one of the most classical foods in the Persian materia medica. Ibn Sīnā prescribed it — as broth (mā' al-shaʿīr / آب جو), as gruel, as boiled water — for fevers, dry irritated guts, and convalescence. Modern nutrition places it among the most fiber-rich grains, with a soluble beta-glucan uniquely studied for cholesterol, blood sugar, and gut microbiome health.
Known to botanists as Hordeum vulgare.
FDA and EFSA recognize barley beta-glucan for lowering LDL cholesterol.
