Golden Milk

Turmeric and ginger steeped in warm milk — a winter nightcap.

  1. 1.Warm the milk gently with grated ginger and turmeric for 5 minutes.
  2. 2.Crush cardamom pods and add for the last minute.
  3. 3.Strain into a cup, stir in honey once warm (not hot).
When to take

Before sleep on cold evenings — soothes joints and warms the gut.

Sekanjabin

Mint-vinegar syrup of summer — Persia's oldest soft drink.

Ingredients
  • Mint
  • ·1 cup sugar
  • ·1/2 cup white vinegar
  • ·1 cup water
Method
  1. 1.Simmer sugar and water until dissolved, then add vinegar; reduce 10 minutes.
  2. 2.Off heat, add a generous handful of fresh mint; cover and steep 1 hour.
  3. 3.Strain, refrigerate. Serve over ice with grated cucumber.
When to take

Midday in summer to refresh and cool — a classic with crisp romaine leaves.

Saffron–Date Morning Tonic

  1. 1.Pit two dates, stuff each with a walnut half.
  2. 2.Bloom a pinch of saffron in a tablespoon of warm water for 2 minutes.
  3. 3.Drizzle the saffron and a teaspoon of honey over the dates; eat with warm milk.
When to take

First thing in the morning for low energy, cold constitution, or post-illness recovery.

Heart-Gladdener Tea

Borage and rose — Avicenna's remedy for melancholy.

  1. 1.Pour just-boiled water over 1 tsp borage petals and 1 tsp dried rose buds.
  2. 2.Cover and steep 7 minutes; strain.
  3. 3.Finish with a teaspoon of rosewater and honey.
When to take

Late afternoon for anxiety, low mood, or after emotionally heavy days.

Doogh

Salted mint yogurt drink — Persia's table companion.

Method
  1. 1.Whisk 1 cup yogurt with 1 cup water until smooth.
  2. 2.Add a pinch of dried mint and salt.
  3. 3.Serve cold alongside saffron rice and kebab.
When to take

With heavy or fatty meals — balances eggplant, lamb, and warming spices.

Fennel–Cumin Digestif

A tiny cup of warmth to close the meal.

Method
  1. 1.Toast 1 tsp fennel and 1/2 tsp cumin seeds dry for 30 seconds.
  2. 2.Crush gently; steep in a cup of just-boiled water with a crushed cardamom pod.
  3. 3.Cover 5 minutes; sip slowly.
When to take

After heavy meals to ease bloating and gas; especially for cold-damp constitutions.

Quince Compote

Stewed quince in rosewater — calms a hot stomach.

  1. 1.Peel and cube one quince; simmer in 2 cups water with cinnamon for 25 minutes.
  2. 2.Add sweetener; cook until syrupy.
  3. 3.Finish with a tablespoon of rosewater off heat. Chill.
When to take

Two spoonfuls before meals for heartburn, or as a soothing dessert.

Black Seed & Honey

Method
  1. 1.Grind 1 tsp black seeds.
  2. 2.Stir into 1 tbsp raw honey.
  3. 3.Take half a teaspoon on an empty stomach with warm water.

Daily through cold seasons for immunity and respiratory strength.
