Khoresh is one of the foundations of the Persian table: a family of slow-cooked dishes built around meat, vegetables, herbs, fruit, legumes, nuts, or combinations of them. The finished dish is usually served with Persian rice.
There is no single formula for khoresh. Some are deeply herbaceous, some tart, some rich with nuts and fruit, and recipes often vary between regions and families.
