Bread & the Persian Table
A long stone-baked flatbread, baked on a bed of hot pebbles.
What is it?
Sangak is a wholemeal sourdough flatbread stretched long and baked directly on a bed of heated stones, which leaves its underside dimpled.
It is bought fresh from the bakery, usually still hot, and is often draped over the rack to cool on the way home.
The Persian table
Sangak is eaten with breakfast, with kabab, and torn into the broth of abgoosht. Sesame or poppy seeds are sometimes scattered over the top before baking.
