What is it?
Kabab torsh belongs to Gilan, on the Caspian coast. The meat is marinated in a paste of ground walnut, pomegranate molasses and herbs before grilling.
The name means sour kabab, and the sourness comes from the pomegranate rather than from lemon.
The Persian table
It is a regional dish rather than a nationwide one, and is usually served with rice.
